I love it when you try a new recipe and it’s a big hit with the family! This picture does not do it justice!  I actually forgot to take a picture so this is a picture of the leftovers taken a day later.  It was so good I had to share!  Let me know if you try it!

Ingredients:

1 lb of salmon (wild caught is best!)

1/2 cup of cilantro

1 large garlic clove minced

2 tbsp lime juice (about one lime)

2 tbsp olive oil

1/4 salt (optional)

Directions:

Grease an 8×8 glass baking dish with 1 tbsp olive oil.  Place salmon filets skin side down.  Combine remaining olive oil with rest of the ingredients in a small bowl.  Mix well and pour over salmon fillets.  Bake at 425 for 15 minutes or until the internal temperature reaches 145 degrees (I have a great digital thermometer that tells me exactly when it’s done)

I made some fresh corn on the cob, brown rice and seasoned black bean by Lunn’s Kitchen to go along with it.  I used 1/2 a lime juice to finish off the dish.  It was so yummy – my husband said yes to having it again!
