For many of us, the temperatures are starting to change. I don’t know about you but when that happens, all I want is soup! Something about a warm bowl of soup on a fall evening makes me so warm and happy! Anyone else?

Soups not only serve as a feel good meal in the colder months, they also are great for getting in good nutrients! They can be packed with lots of veggies, good fats and carbs. Another thing I love is the ease of making them. Either toss everything into a crock pot or a pot on the stove and let it cook. Soups can be made in a variety of ways and allows for you to not get bored. From chili, to vegetable, to a good thick potato soup, you can make just about everyone happy.

Here is my favorite Chicken chili recipe that my whole family loved!  This makes for a great football game easy meal!

Ingredients:
  • 2 cooked chicken breasts cut into small pieces or shredded (I sometime buy a cooked rotisserie chicken)
  • 1 can Great Northern beans
  • 3 cups organic bone broth
  • 2/3 cup frozen fire-roasted corn (this is optional)
  • 1/2 cup diced tomatoes
  • 1 small onion diced
  • (1) 4.5 ounce can green chilies
  • 3 cloves garlic diced
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 Tbsp Olive oil

Directions

In a soup pot, sauté onion, garlic, oregano and cumin in 1 Tbsp olive oil (about 4 mins).  Add the rest of the ingredients and simmer on low for about 10 minutes.

Fun toppings: cilantro, shredded cheese, sour cream, avocado or crushed tortilla chips.
