I love a BAS (Big Ass Salad) and try to have one most days. I find that the key to staying consistent with having a salad every day is change to up your dressings and ingredients to prevent boredom.
This salad is inspired by the Mediterranean salad that I had @Harvest Kitchen. Add your favorite protein and it’s a meal!
Mediterranean Salad Ingredients
- Greens
- Bell pepper
- Chickpeas
- Cucumber
- Olives
- Tomatoes
- Red onion
- Feta (optional)
Dressing:
- ¼ cup Olive oil
- 2 tbsp Red wine vinegar
- 2 tbsp lemon juice
- 1 clove garlic
- 1 tsp dried parsley
- 1 tsp oregano
- salt & pepper to taste
