I have been craving this hormone happy salad all week and finally got around to making it!

This massaged kale salad with tahini dressing is one of my favorites and is very satisfying! Add a protein and you’ve got a complete Fat, Fiber, Protein (FFP) meal! I paired it with a bowl of hearty chicken chili.

I try to eat at least 2 servings of cruciferous veggies every day because these veggies help your body process and eliminate excess estrogen so you can avoid estrogen dominance and reduce your risk of hormone-dependent cancers.

The key to this salad is to massage it so that it becomes softer and easier to digest and it tastes better!

Salad Ingredients:
2 bunches of kale
1/4 cup pumpkin seeds
salt & pepper to taste

1/4 cup tahini
2 TBSP lemon juice
1 clove garlic
2 TBSP apple cider vinegar
2 tsp olive oil

Mix the dressing ingredients in a blender or food processor, chop the kale into small pieces and mix the dressing into the kale. Use your hands to massage the dressing into the kale. Add pumpkin seeds and salt/pepper to taste.
This salad will last several days in your frig!! Enjoy! ❤️
