This salad screams summer! If you have a summer garden or a tower garden, you might be growing lots of these ingredients already. This recipe was taken from this week’s meal plan in my FASTer way program! It’s perfect for low carb days and it’s packed with antioxidants. In midlife as we lose estrogen, we areĀ  in a systemic inflammatory state which is why we need to be flooding our bodies with extra nutrition during this stage of life especially fruits and veggies!

Ingredients (two serving)

1 cucumber
1 avocado
3 tsp lemon juice
2 Tbsp parsley (chopped)
1/4 tsp sea salt
1/2 cup cherry tomatoes (chopped)
2 Tbsp red onion


In a bowl, add the cucumber, avocado, tomatoes, lemon juice, parsley and sea salt and toss to combine!
