I was talking with some friends, after teaching my cycle class, about different breakfast ideas and chia pudding came up!  If you’re looking for a fiber rich sweet treat or new breakfast idea that reminds you of pudding or tapioca – you found it!   I often forget about this healthy treat and then get on a kick of making it a lot.

 There are so many great reasons to eat Chia seeds – here are my top 3!

Chia seeds are great for curbing your appetite since it expands up to 12 times it’s own weight so it helps you feel full.

They are chock full of omega 3 fatty acids.  In fact, it has one of the most concentrated sources of omega-3 in any food.   These fatty acids are great for calming inflammation (great for post workout and fighting disease) and also great for beautiful hair, skin and nails!

My favorite fact about Chia is that it is packed with fiber.  Nine times out of ten when my clients first come to work with me, they’re not meeting the USDA’s recommendation for fiber.  Fiber helps keep things moving – if you know what I mean!

Chia Pudding Ingredients:

1 cup almond milk
1/3 cup chia seeds
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 – 1 packet Stevia (optional) or honey
berries for topping

Stir together all ingredients in a small bowl or jar. I like to just put it in a mason jar and shake well. Refrigerate for 2 hours or until desired thickness is reached. Stir occasionally.

Warm up for 2-3 minutes on the stove and top with berries or your favorite topping. This is an easy make ahead breakfast option.  You can eat it cold or warm it up.
